shepherd’s pie & banana chips

Last night, we tried a Paleo shepherd’s pie recipe that I adapted from a recipe I stumbled across online, thanks to a FP coworker who passed along an old FP coworker’s blog. Now, I’m pretty obsessed with the blog’s recipes! Check it out here – The Hobson Homestead. As a new Paleo groupie, I’m trying to get some basic information – switches for wheat products, basic recipes, etc. – and Haley has some great stuff that looks doable and accessible for a beginner like me. Kudos!

Anyway, the shepherd’s pie uses a cauliflower mash instead of the traditional potatoes, and I’ve been interested in trying mashed cauliflower for a while after recently having whipped parsnips at Murphy’s in Virginia Highlands. Verdict – much better than expected, which says a lot from an avid mashed potato lover.

Check out the recipe here. I used ground turkey, our staple ground meat, instead of ground beef – still delicious.

Last week was an ice-cream-every-night type of week, so this week I’m the “no ice cream” enforcer at the house. But I still wanted something sweet so I whipped up some Banana Bites, which I saw on Five Ingredient Fix the other day. Historically, I haven’t liked banana chips, but I do like chocolate and peanut butter so I figured the chocolate/peanut butter filling may outweigh the banana chip. Discovery of the night – organic banana chips from Publix are amazing (even on their own) – I’m pretty much hooked. So, at least, I scored a relatively healthy snacking option before making the recipe.

The end product was delicious too, albeit a little less healthy. Super simple recipe – melt 4 oz semi-sweet chocolate (I used chocolate chips) and 1/4 cup natural creamy peanut butter until smooth; let melted mixture cool to room temperature then pipe onto banana chips and sandwich with another chip. Yum!
